Welcome to the my Grandma Mary Barbara Hurt-Paris'
recipes for Cinnamon Rolls, Kolaches, and Spudnut Rolls!
The recipes were collected from my Aunt Florence and my mother (Vada).
Spudnut Dough
Mix together:
4 Cups milk, heated
1 Cup sugar
1 Cup vegetable oil or shortening or Oleo
1 Cup mashed potatoes
1 tsp. soda
1 tsp. baking Powder
2 tbs. vanilla
Add: Enough flour to make batter. Then add 4 eggs. Beat until
smooth. Soak: 4 tbs. or 4 pkgs. of yeast in 1 Cup warm water.
Add: to batter mixture. Let raise a little (about 5 minutes).
Add 2 Cup tsp. salt. Mix into dough. Add flour (enough
until dough isn't sticky). Make it a medium-soft dough.
Let rise. This dough can be used for Doughnuts (which I use
it mostly for) . . . Cinnamon rolls, Kolaches (Like Grandma
Paris made). Recipe can be cut down!

Spudnut Doughnuts
1 quart potato water
Mix 1 Cup Powder milk or use regular milk
1 tsp. soda
1 Cup sugar
1 tsp. Baking Powder
1 Cup shortening
1 tbs. vanilla
1 Cup mashed potatoes
4 eggs
Dissolve 4 pkg. or 4 tbs. yeast in 1 Cup warm water. For home
use you may want to make smaller amount. Heat potato water
until lukewarm. Stir in Powdered milk and continue heating until
steaming hot. Add sugar, shortening, mashed potatoes, vanilla,
salt, soda & Baking Powder. Add enough flour to make a stiff
batter then add eggs. Beat them into batter. Be sure its
cool and add yeast dissolved in the warm water. Continue to add
flour until dough is not sticky. Let rise and put out on table
a small amount at time. Roll out about 1 inch thick. Cut
with donut cutter. Put on flat pan 1 inch apart to raise.
Dont let raise too much. Then put in deep fat 325º.
When brown on one side turn over then take out and glaze with thin Powdered
sugar frosting. Have fixed: Powdered sugar with vanilla, a pinch
of salt, and water to make right consistency (medium thick).
Glaze each doughnut while Hot. Let Cool. Ready to Eat!

Spudnut Cinnamon Rolls
(Use "Spudnut Dough Recipe")
Roll dough on well-floured board into a rectangle 9"
wide and as long as you want to. Spread with Sugar and Cinnamon
mixture and some brown sugar (raisins if desired).
Roll up beginning at wide side. Pinch edge into roll. Cut
1" or 1 ¼ " pieces. Place in buttered pan (close
together).
Let rise in warm place until doubled in bulk. Heat
oven to 350º. Bake until brown (about 25 minutes).
Frost while "Hot" with "Powdered sugar frosting".
If desired, sprinkle with chopped nuts.

Kolaches
Sweet Dough:
1/3 Cup sugar
1 Cup milk, scalded (not boiled)
1/3 Cup shortening
1/3 mashed potatoes, cooled
Mix together. Add 1 tsp. salt. Add enough flour to make
a soft dough. Add 1 egg and beat in 1 tsp. vanilla. Add
to dough, 1 pkg. yeast dissolved in ¼ Cup warm water.
Add approximately 4 Cups flour or add enough flour to make stiff dough.
(wont be sticky to the touch). Knead lightly
on floured board. Put in greased bowl to rise until double in
bulk. Punch down. Roll out about 1/2 inch thick. Cut
in 3½ inch to 4 inch squares. Place mashed fruit in center and
pull corners up over the fruit and squeeze corners together. Place
on greased pan or baking sheet about 1½ inch apart. Let
raise and bake 375º until begins to brown. You can frost if desired.
I use mashed prunes, dried apricots, thickened crushed pineapple or
jam for center.

Grandma's Kolaches
Mix together: 1 pkg. dry yeast & ¼ Cup warm water
(110-115º). Mix in sauce pan; Heat to 120º & add to yeast
mixture: ¾ Cup milk, ½ Cup butter or margarine, ¼ Cup sugar, 1
tsp. salt, 3 ¾ to 4 ¼ Cup flour, ¼ tsp. cinnamon, and 2 eggs.
Add 2 Cup flour, & ¼ cinnamon and beat well.
Add 1 ¾ Cups flour and mix well. Turn on floured board & knead
5 minutes. Cover, let raise until double in bulk. Divide in 2
portions, cover & let rest 10 minutes. Divide each in 9
to 12 balls. Place 3 inches apart on greased baking sheets.
Flatten each ball to 3" circle. Let rise until double.
With fingers make depression in each. Add 1 heaping Tbs. of filling
(Prune or Apricot).

Prune Filling
Mix together 2 Cups chopped prunes, ½ Cup walnuts, 1/3
Cup sugar, 2 tsp. lemon juice, and ½ tsp. cinnamon. Fill Kolaches.
Bake 375º for 10 to 12 minutes or golden brown. Cool on rack.
Dust with Powdered sugar or drizzle with icing (Powdered
sugar & milk).

Apricot Filling
Mix together 2 Cup Apricots, 1/3 Cup sugar, 1 tsp. butter,
and ½ tsp. nutmeg. Fill Kolaches. Bake 375º for 10 to 12
minutes or golden brown. Cool on rack. Dust with
Powdered sugar or drizzle with icing (Powdered sugar &
milk).
